Spicy White Bean Stew With Broccoli Rabe

Allison Roman's second bean stew.

ingredient amount procedure
Italian sausage 1/2 lb
Lightly brown in oil, medium-high
Olive oil ¼ cup
Garlic, thinly sliced 4 cloves
Red onion, thinly sliced 1 medium
Lightly brown with sausage, medium, 5 min
Harissa paste 3 Tbsp
Cook off moisture, 2 min
Large white beans, drained and rinsed 3 15oz cans
Crush in pot
Chicken broth 4 cups
Broccoli rabe stems, chopped 1/4", leaves torn into bite-sized pieces 1 large bunch
Simmer 20 minutes
Preserved lemon, thinly sliced 1
Broccoli rabe leaves, torn into bite-sized pieces 1 large bunch
Stir in pot to wilt
Feta cheese, crumbled 2 oz
Parsley, leaves and tender stems 1
Fried or medium-boiled eggs 4
Garnish
  1. Heat ¼ cup olive oil in a large pot over medium-high heat. Add sausage and cook until just starting to brown.
  2. Reduce heat to medium. Add garlic and onion, and season with salt and pepper. Cook, stirring occasionally, until lightly browned and sizzled at the edges, about 5 minutes.
  3. Add harissa, and stir to coat in the oil. Cook until the harissa is a brick red color, the sugars start to caramelize and the oil turns a nice vibrant fiery orange color, about 2 minutes.
  4. Add beans, and season with salt and pepper. Using a wooden spoon or spatula, crush a few beans to release their creamy interior.
  5. Add the broth and reserved stems, and season with salt and pepper. Bring to a simmer and cook until you’ve reached your desired consistency, about 20 minutes.
  6. Add broccoli rabe leaves and preserved lemon, and stir to wilt the greens. Season with salt, pepper and red chili flakes.
  7. Serve with feta and parsley, and eggs.
Note: Kale can be used in place of broccoli rabe.
Note: If you can only find smaller bunches of broccoli rabe, then use two.
Note: You can substitute tomato paste and red chili flakes for harissa paste.
Note: You can use beans such as cannellini, butter or great Northern.
Note: Instead of preserved lemon, you can squeeze the juice of a fresh lemon.
Note: Instead of feta cheese, you could use queso fresco or pecorino.
Note: You can substitute cilantro for parsley.
Note: You can substitute slab bacon or leftover ham for sausage.
